Default A Couple of Weeknight Meals

Well with the rain this morning I expected the day to be pretty much a wash but it turned out to be a really nice day. Soggy but nice!
While it was still raining and gloomy I decided toi do some indoor cooking. I started off with something I saw someone on another forum make. Vegetarian Chili!. It came out being a much better dish than I expected it to. It doesn't take long to make a all and I can see myself making this again in the future. I should mention that this will be for a weeknight meal.
Black Bean and Hominy Chili
Next up was a pot of thirteen bean soup. We love homemade soup and my wife asked me to make this again so I did as requested.
Still needs some time to cook but it is looking and smelling delicious!
