Default Fresh Shrimp

A question for some of y'all That trawl or cast for shrimp.
If shrimp are caught today and iced properly How long before the heads and legs start getting the red / dark color .
I had someone telling me that the shrimp they had had been caught the night before. The color was already turning and they felt slimy.
I knew they were older than 12 - 20 hrs but i didn't know how old?

I was told by an old man that shrimpers for years out of Grand Chenier that shrimp will stay good for 7 days on just ice. The ice chest must have the plug pulled with no water.

sounds like they were about a week old or the boat had refrigeration issues.

I don't ever recall shrimp getting slimey for any reason unless they are mixed with fish
