awful broad question for freshwater....depends on time of year and situation at hand I got alot of favorite fresh water baits.

Salt water.....gold spoon for reds and white cocahoe for flounder and sand eels for specks.

Salt water: winter, MirOlure, suspending over a grass bed. (Trout killa)
summer, Deadly Dudley, opening night, bay chovy
3" Berkley power bait, pogie style, Fire tigar(color)

I agree... freshwater is broad but here are some of my favs. baby brush hog (watermelon red) black beatle spin, DD14 red eye shad, fluke (shad) and don't forget the chartuese and white spinner bait with the gold willow leaf!!
