I guess I am a pureist and pretty much ole fashoned kind of guy I dont care for seafood sausage. It's just a me thing and I aint trying to argue. The Gar fish tasso if ya will was some thing my family has been doing for generations and they prolly got it from indians.

Another great thing ot do with gar is to boil it in ya favorite boiling seasonings pass it through a grinder or flake it by hand and use it for boulettes, patties or stuffing for stuff.

Take 1 big gar, cut out that pretty meat and make 200 pieces of bait for the trotline and end up with 20 catfish. I would trade 1 gar for 20 catfish.
