If you guys ever get up North of Jasper to a lil town called Hemphill TX....you have to stop by Hemphill BBQ for some ribs...The best hole in the wall BBQ i've ever had! That guy knows what the hell he's doing. Good looking food in the pics fellas.

Did Someone say brisket?
here is a packer brisket and a pastrami that i smoked a couple of weeks ago. Can you say FOOD PORN?




after smoking the bisket i seperated the point and the flat .Sliced the flat for sammies and cubed the point for burnt ends. (can you say meat candy).
You cubethe point in 1"cubes and put the cubes back in a foil pan cover w/ your favorite rub and bbq sauce. Place them back on the smoker for another 2-3 hours. Let them cook till they get dark and gooey.
(gooey is a cooking term isn't it?)

I smoked a buttload of chicken yesterday for a boat club meeting tonight.
Heating it right now. Got the house smelling just right.
