Grilled Refish w/Lemon and Butter Sauce
Sprinkled the fish with Old Bay Seasoning and Tonys, laid on the pit till done and basted with Luds Sauce. Sauce: 1 stick of butter 1/2 pint heavy cream 1 lemon Crystal Hot Sauce or Cayanne Pepper Course Ground Black Pepper Melt butter, then add seasonings and juice from 1 lemon. Add cream and stir, stir, stir until it just starts to bubble. Remove from heat and pour over grilled fillets, then top with lump crab meat. |

Brown's Grocery in Hackberry or Grand Lake.
Market Basket usta sell it, but stopped. HR&G usta sell it online. Not sure if they still do. It is good for basting, injecting, marinating... ect. Guud stuff. It started in Hackberry, then moved to Sulphur after Rita, then moved to Oberlin or Oakdale a couple years ago. Might be able to find it over there. |

That was last night. Ate some grilled Trout with Kade Shaw's Dragon Sauce tonight, along with left over beans and mashed taters from last night.

Ingredients:
-1 Bottle of Tiger Sauce -1 Bottle of Honey -¼ Cup of Blackburns Syrup -20 Squirts of Tabasco Sauce -10 Squirts of Louisiana Hot Sauce -1 Teaspoon of Corn Starch -½ Cup of Water -TUNA Directions: -Heat up ingredients and bring to slow boil stir mixture until corn starch is blended and sauce thickens. -Once sauce thickens remove from heat and set aside -Cook Tuna to your desire ( I use just Black Pepper, Granulated Garlic, and Olive oil) -I heat the griddle to 300-350 degrees and sear the outsides and leave it slightly pink in the middle, it does not take long maybe 20-30 seconds on each side. -Top it with sauce and boom Dragon Tuna! |
