Need a good Red Snapper Recipe
 
Got two 4lb snappers off a boat in Leeville today. What do you guys think? Charcoal grill, baked in the oven, pan seared? Let me know

Let em sit in some Italian dressin over night with a lil of your fab seasonin then take em out in the am sprinkle a light cinnamon on em let em sit a lil longer then throw em in a hot skillet I call it the good stuff...

This sounds interesting - filet them out or leave them whole with the skin on them?

Fillet hem out and remember never can have too much seasoning but don't over do the cinnamon..

yeah, wrap in foil, cover in butter, lemon, season with fresh ground pepper, parsley flakes, top w sliced tomatoes & grilled onions

Bake for 20 mins at 350.

fillet and prepare three any way you want, but on the fourth: get wasabi, and soy, get your sharpest chef knife and very thinly slice the fillet. dip and enjoy while you prepare the other three! Laissez les bons temps roulet
