Hunted Saturday with 3 friends and we killed 5 specks and one lost mexican squealer. Hunted in Klondike and it was a little slow.

Sunday I hunted with a friend on the Illinois Plant and we killed a limit of ducks, 2 eagleheads, and 1 speck. The specks were shy of the water around the blind but we managed one to come in to die. Highlight of my morning was the big fat greehead I killed. See the last pic

I'll be mounting it inside some sausage casing. It was a pretty bird though

I know. Anyone got any tips for duck sausage? And before anyone says it I already know the joke lol. I've heard 70/30. Anyone have experience with it?

I've done 60/40 Chk/duck and it came out great. Use cayenne pepper for the seasoning with whatever else you want... Trail and error I have made some terrible sausage but when you get it right its addictive

I have a recipe Mcnabb. When I get home I will post it for you. I have made both goose and duck. It is real good in a goose and oyster gumbo.

Try Smokies
 
Good report on the specs. If you have a ton birds try to make smokies. They turn out like slim jims. I bought a kit that looks like a jumbo caulk gun from gander mountain back when I was living in pennsylvania. Bone out goose and duck and grind as you would for sausage. Try to cut off as much fat as possible. Mix with jerky seasoning, shoot into thin diameter casing and put in a smoker for at least 4 hours. If too soft put into oven at 200F to dry out and finish. Too long in the smoker will make it taste like pure smoke. We never cut with beef or pork, but it probably wouldn't hurt. Freeze what you can't eat in a week or add nitrate before you shoot into casing. This receipe and goose gumbo are the only ways I have found to make the resident canada geese I used to kill edible. P.S. its a lot of work so make large batches and the weight will shrink in half (40 lbs goose will make 20 lbs slim jims).
