Who does it? Notice difference between not doing it? What method do you prefer? Just curious

Every time I go out with my buddies who comerical fish tuna we insert a knife into the chest through the pectoral fin . This is when we are pleasure fishing. When they commercial fish they take it 1 step farther and once they de head it they run a rod down the spine to stop the flow of any blood
