Well, I was all ready to make the "Hurt em Hatten's" wingage this weekend till I sliced my thumb making salsa Friday night (salsa makin' will be another post)...

Anyway, wings were still sounding good but I wanted to try something in the oven as I was "injured" and all...

So here we go :

Take your raw wings, seperate the drummet and clip the little winggy piece off of the "wing" part and discard, kitchen shears work great for this...

Rinse your bird parts and pat dry with paper towels...

Get a big bowl and add enough olive oil and "toss" things around till they are well coated...

Put the wingage on cookie sheet with lip and a rack like in my original pic and season with lemon pepper and garlic powder...

Cook @ 400 for 15-20 mins, pull pan and flip all your wings and re-season...

Cook for another 15-20 mins, pull pan and flip again plus re-season...

Cook for another 15-20, re-season again, place oven on broil LOW... Keep the door cracked open and watch closely as they crisp up...

Once you get them crispy (5-7 mins depending on your oven) pull and eat...

That's it !!!
