Scaup and Ring Neck Ducks
 
I have never cooked a scaup or ringneck duck as I always thought of them as trash ducks, sort of like spoonbills. However my B.I.L. says he eats them all the time. What is your opinion on these ducks as table fare?

I think I heard of ring necks referred to at butter balls at one point in my life???

I fry them up- cant tell the difference. I also use them for making duck sausage. Can't tell the difference once mixed and smoked with pork.

I've always eaten them in gumbos.

I breast a ring neck or scaup. I pull the feathers off the breast enough to see the breast bone line Filet the breast out starting by cutting down alongside the breast bone, then cutting above the wing and down along the skin line but not cutting the skin. I then use the filet knife to cut the skin off from the inside like doing a deer.

Best gumbo duck in my opinion. Save those other ducks for baking,potroasting,and grilling. We allways called them butterballs when I was growing up.

I'll take em both any day over a mallard!! But as everyone else said they're great in a gumbo.

First off, a turd cooked in a gumbo would taste good. If they are only good in a gumbo that should tell you something.......
