Turtle Soup and Turtle Sauce Piquant
 
I need the low down on how to make these, starting with where or how to get the meat (catch myself, or a store with local turtle). These are 2 of my favorite and I have NEVER tried to make them - I'm a little ashamed.

Anybody willing to help me out?

As for the meat.....start calling seafood markets. There is Ole Holdbrook Fresh Fish Market on Hwy 171 about a mile north of I-10 in Lake Charles that usually sells Turtle, not sure if they have it this time of the year. 1-337-439-9554

Livin in Broussard, from South Crowley... I pass through there just about every other week.

There is a place on the Bayouside in Matthews, it's a big white building called Adams Fruit Stand. They sell Turtle meat. Not sure on the price. If you've never stopped in there stop in and check it out. They sell everything from fireworks to hot sauasge po-boys to turtle meat. He has one of every kind of amimal in the swamp mounted. It's like walking back in time when you go in there.

I like it already, I will definitely be stopping in there. Hopefully next week!

To me, turtle meat is way too expensive for the taste. You can cook a just as good or better sauce with much cheaper meat. Stuff is like $15 a pound over here. I bought it once, but never again. Now if you can catch one then that's another story.

Used to fill the boat with soft shell turtles in north LA in a creek behind camp. Makes excellent table fare although we left the cooking to an old coonass named Mike. Really wish I would have been more involved in the cooking process but after cleaning 100+ lbs of turtle meat it was time to hit the whiskey
