Duck Meat

The thread about deer meat got me to thinking about ducks. How do you get the wild taste out of duck meat? For the wife and kids of course, not me :D

Clean ducks. Soak in water in fridge. Change water often until meat turns from red to pinkish. Bout to days. Then freeze or cook. Just like bleeding a deer. No more wild flavor.

Breast em. Shake your favorite dry seasoning on them breasticles, wrap in bacon, grill em like a steak, med. rare, over a hot fire. Tastes like a steak. Woodies, teal, mallards, grey ducks, widgeon, pintail. Haven't tried that with scaup or spoons.

If grilling, I marinate them in dale's mixed with Italian dressing overnight

SULPHITE 01-24-2013 03:50 PM

soak in milk, butter milk

or

soak in italian dressing, worchester sauce, tabasco or tiger sauce

keep changing out the liquid in order to really knock it out.
