Trespassing with keys deboned wood duck.

Decided to cook up a few of the woodies I almost got arrested over the other day. Wanted to try something new so I partially deboned them. I cut out the back bone and neck with some poultry scissors then cut out the rib cage leaving only the breast plate and leg bones.

Came out like this Attachment 59229

Seasoned em up and put em browning.

Cleaned up the bottom of the pot with some onions, bell peppers, and chopped celery.

Got the birds back in and water added. Just gotta let em cook down.

I put em on 4 for about an hour and a half and they tender enough to eat. when i have time though i like to turn em down just enough to make it bubble and leave the pot shut for 3-4 hours. They fall off the bone like that. Sometimes I'll stick the whole pot in the oven on 300 for 4 hours. My buddy josh cooks the best duck like that.

Once you got the back bone out its pretty easy to get the rib cage out
