Do you scale the flounder when you clean them or just head and gut them? If I ever stumble on a flounder, it generally just gets filleted but I would like to give this a try.

Scale them with a wire brush. Like you use on grill. The scales are very small

Scale both sides

I just scale brown side with wire brush the white side goes down and I just won't eat the skin on that side

easiest way to clean a flounder, pressure washer! Takes about 30 seconds
