Tall who think they have good / great knife skills in the kitchen Buy a couple of packages of ox tails and trim them w/o butchering them up.
I only thought i had skills. Humbled me real quick. Hardest thing i have ever tried to trim.:pissed:

Had some at lau berge and was some of the finest tasting beef i ever put in my mouth.
Finally got the chef to give me the recipe so now trying it at home.

I'd never had it before but it's a popular dish here in Africa. Really nice. The beef is very tender. You do have to work for it though.

oxtails are some of the most flavorful cuts of beef, one of the most overlooked too

The Kitchen in downtown lake Charles serves them on Tuesdays. They are very good.
