Homemade Duck Pastrami and Foie Gras Fries
I wanted a really good sandwich so I decided to make some Duck Pastrami. After brining for two days, adding the spice rub and a smoking session on the Bubba Keg. http://i1183.photobucket.com/albums/...0/DSC04280.jpg Slicing http://i1183.photobucket.com/albums/...1/DSC04298.jpg Ready for a short steaming. It was already really tender so the steaming was for warming it up before making the sandwich. http://i1183.photobucket.com/albums/...1/DSC04299.jpg Time to eat! I had made all the condiments you see there. Mayo, Brown Mustard, Yellow Mustard(I couldn't decide which one I wanted to use)and Ketchup for the grilled fries. And the pickles too! http://i1183.photobucket.com/albums/...0/DSC04311.jpg |
You were hungry for a good sandwich and had to wait 2 days for it? You sir, are a very patient man! The food looks outstanding as always!

What's in the spice rub?
Should have thrown some aged cheddar on them fries and made poutine
I would also like the recipe. Is that wild duck or tame duck?
It was domestic duck. Give me some time to get the recipe together.
