smoked redfish salad
Had some leftover redfish on the half shell that i smoked with mesquite last night. I made some homemade mayo, then chopped the fish roughly and mixed the fish, mayo, onion,celery, green onion, apple, jalapeno, and lemon juice. Served it on hulled out bolillo rolls topped with cole slaw. One hell of a sandwich and a great way to serve leftover fish

Dude that sounds freaking awesome :). Them left overs can make some fine eats buddy.

we use the throats and skirts for salads and dips. marinate, smoke and pick the meat. makes a great salad.
