DAYUM

That's an easy one here.
I just fire up the smoker for the brisket and set the burner up right next to it to cook the gumbo. While you stir the gumbo ,The smoker can do it's thing to the brisket.
Slice the flat of the brisket for dinner and vac seal packs of slices for later . Take the point of the brisket ,Cut it into 1 inch cubes . Put the cubes in a foil pan and cover w/ BBQ sauce. Put the pan back on the smoker for 2 - 3 more hours for some of what we call burnt ends .
Burnt ends are like meat candy.
I allways cook big and freeze. That way when i want something ,I thaw it and heat it.

Seafood gumbo

Big Flounder 12-09-2009 06:53 PM

You need to cook both. Put the gumbo in the fridge for the next day cause that just makes gumbo even better and eat the brisket right off the pit. Next, post your address so we can all come get a bite!!! :smokin:

if you want a great brisket, go to Bi-Lo in new iberia, they have brisket cooked and sliced with gravy, all you have to do is heat it up and cook some rice. its pretty inexpensive, my wife and I get the 8-10 person brisket and its 25 dollars and like i said all you do is heat it up or they will even heat it up for you if you ask and its delicious

trophytroutman 12-10-2009 10:24 PM
