Axis deer jerky

Cut up a axis deer roast and blackstrap into strips to let marinate for 20 hours

2 different marinades ( doing a test run on both )

I'm going to put it on the Kamado Joe @ 150-155* for 2-3 hours to get a nice smoke flavor then put it into my dehydrator .

Did you put cure in your marinade? Looks good but some of the slices i see are kinda thick and may not dry out completely.
If no cure make sure and store it in fridge. (If it last that long).

I used cure , everything was cut to 1/4 thickness

It's pretty good
Gonna try a meat slicer next time and do thin slabs instead of strips

The meat will slice a lot easier if you put it in the freezer for a couple of hours before you slice it. You do not want it frozen you just want it to firm up.

I made some a couple weeks ago. But smoked it till done. came out very good.
