Finally got my wife eating fish other than red snapper, it's a happy place in my home from now on!

Yea buddy! I put just enough veg. oil to cover the bottom of the pan and medium high to warm it. About 2 TBSP of Tony's a little sea salt and some Cajun Blast Creole Seasoning to 1 Cup of Flour - dunk the filet's pan fry them up. Shoot a little lime or lemon juice on each side while cooking, one flip and good to go.
