Roasted Wood Duck

I was planning on mounting this one, but my dog had other ideas and used it as a chew toy while I cleaned the other ducks. Plucked him out and soaked him in a salt, pepper, garlic, and rosemary brine for a few days. Roasted him in the oven for around 20 minutes at 500 degrees. Perfect medium rare to medium in the breast and I had to do a light sear on the leg to get it fully cooked through without overdoing the breast. I used the drippings with some butter and squeezed a Satsuma to make a sauce for it. I enjoyed this while my wife sat next to me eating dinosaur chicken nuggets because she still refuses to eat duck. I told her I will try it with a whole chicken for her.

Looks amazin' Mat. Thanks for posting this. WE ahd store bought duck couple days ago but I much prefer wood duck growing up in the swamp its the duck we ahd the most and I truly love the flavor.
