Smoked a small piece of pork belly and chopped up for Pintos. I chopped up a piece about 6" X 8" X 1 1/2" thick. Simmer from 10 am till about 6 pm... and hope they done.

2/3 hickory and 1/3 apple pellets on a Masterbuilt. 240* for 4 1/2 hours. I think it could have cooked 1 to 2 hours more. I was afraid to cook at 275* and melt away all the fat. Core kitchen knife from Burke's outlet...cheap 6 or 7 bucks-nothing special but they hold a decent edge. I have 3 of the big ones and about 6 of the paring 3" blade size. My sister-in-law says my cooking is going to kill my *** !
