I cant believe no one has the logical and simple answer to a common question, just get her some adult diapers for the trip and go #2 before you leave the dock.

remind her what goes in comes out so don't be munching and drinking the whjole time if she doesn't want to have to go in it.

most guides have you back at the launch by noon so #2 "shouldn't" be an issue

My wife just squeezes into the center console and goes at it. I have a 5gal bucket that is cut off half way to give her a little more room. Gals can amazingly fit into small area's when they need to. Good luck
