I am terrible sorry to hear what you and your wife are going through. Deff shines a new light on everyday life for me. Don't know what I would do without my family. This obviously really means a lot to her and I dont think you should take that away. Hobie makes a really good kayak, but can be expensive. Maybe try to tone it down a notch and get something just as nice but a little cheaper. Just let her know that you've been looking in to it and found another one that you really really like. She may be feeling that this might be one of the last things she will be able to do for you. Do this for her and cherrish it every time you use it. Pass it down to your son or daughter.
