Just put a 13+lb brisket on the smoker. will be done sometime tonight?

Man you should have put it in at 3 am so you could eat this afternoon! How did you marinade it? I miss a good smoked brisket.

Bob.....I turned my alarm off in my sleep.....didn't start till 6!!!!! Ouch!!!! We gonna be eating late.....once the ribs come off, I'm gonna crank up the heat and try to get The butt done for this afternoon.

put a couple of big butts on around 7am. after tim woke me up with all of that hollering.lol Gonna smoke some chicken and steak in a lil bit,then put it on the pit for fajitas for lunch.

my problem is miscalculating the cook time. You plan on eating at six,and the meat decides to take a longer than usual stall time. Then thats when the fussing starts from the wife side.lol

Fire stalled at 220.......finally up to 240........bout to wrap them ribs in foil with some Zea Thai rib sauce!!

be careful wit dat sauce, I find it alot spicier than what they serve in the restaurant. They must dilute it a little.

I just put a lil wocestershire on the brisket and black pepper , onion powder , garlic powder and some celery seed on the brisket the day before cooking.
refriderate overnite . and into the smoker.
Doing andoullie and pepper jack stuffed burgers for today. Brisket is for latter.

Anyway!, back to food... Drunk chicken and ribs went faster than expected. That's a first! Now, gotta wait on baked beans(my custom blend) and the wife's potato salad.
