1 cut off head take out guts
2 make a cut fdown lateral line from head to tail on brown side of fish 3 take a SHARP knife and work the blade against the rib cage seperating flesh from bone on both sides of your lateral cut 4 slowly work your blade on the underside of the rib cage seperating meet from bone all the way to the tail cutting baon from fin with pultry shears as u go twards the tail 5 take pultry shears and cut bone at tail....pull out rib cage fully in tact. 6 rinse, stuff, broil, eat TB |
