The Roux (Cooking/BBQ/Recipes) What good is a cajun site without a cooking and recipe forum?

I am headed home next week for turkey day and will get my mom's recipe. I remember my mom making it as a kid and as H said, it takes a LOOOOOONNGGG time to make and is a painstaking process - but it is 100% worth it. After a crawfish boil the work would really begin as we had to scrape the heads to get them ready to be stuffed. Brings back some great memories.

I remember cleaning those heads with a tooth brush!
