Default Snaps in Jalapeno Sauce

In another post I talked about trying this with snapper, and well all I can say is this isthis is heading down town with the windows down and the radio blasting!

Tonigh was over spaghetti!

Jalapeno Cream Sauce
Wash fillets, fresh ground sea salt and ground black pepper to task
Place in zip lockequal part of cracker meal and flour
For 2 fillets
¼ stick of butter
½ average size onion
3 jalapenos use the seeds from 1
3 to 4 tomatoes
1 cube of Knorr’s chicken bullion
table spoon of Kary’s dry roux
Half and half cream
As butter melts and gets to temp add onions and fish, chop jalapenos and add as chopped. Cook fish until done place to the side and cover with foil. Add tomatoes and let them break down then add bullion cube and cook down until starting to dry out, then add Kary’s stir, stir stir all the during cooking. Add about ¼ of a pint of half and half allow to come back to heat then I add cooked pasta ( elbows, shells, penne, piccolini doesn’t matter) and fish.
Grab a beer and a fork and a plate and get with it.
