its hard to pick the perfect time
one of the first ones we had I cooked jambalaya at David Heberts' place on the Friday night. It was at the end of March, cold, and wind blowing like a banji. Later than August and its Football & Hunting Season. I like May or June but thats just my 2 "sense"
