Default Gator sausage and some boudin

Made some gator sausage for the first time today. Only made about 7 pounds to try if. Came out pretty good. Then made alittle boudin for my nephew's wedding.

Looks good. Never even heard of gator sausage, but I am sure it puts a different twist on things. What did you mix it with? Ever since I discovered the deer/ribeye fat mixture that's all I do now.
