Default Leftover Jambalaya Omelette for Breakfast This Morning

So, this morning for breakfast I decided to have a little omelette with some jambalaya leftover from last night.
Added a lil bit of cheddar. The egg yolks were a rich orange color this morning. Mmmm......

Alright, so my omelet flipping technique wasn't working for me this morning so no picture of that.
The shrimp, sausage and chicken made a fantastic tasting omelet for a filling breakfast. Served with toasted Roasted Garlic Foccacia from Caluda's Cottage Bakery.

Take that leftover jambalaya run it through a course grinder and stuff it into some sausage casing. Jambalaya Sauage...... boudins cousin twice removed.
