I sure miss foraging in Vt. When I was in culinary school we use to pick morels and chanterelles. Down here in the winter I pick oysters. One day a buddy and me pick a 100 lbs off the side of the hwy. Hear is a pic of some I found while fishing this winter.

This thread has me thinking i need to keep my eye's open for oyster mushrooms... Didn't really know that any worthwhile mushrooms grew down here.... Oyster's are not morels.... but they sure ain't bad..

Too late for oysters they like cold wet mornings around here. Those mornings that are foggy and below 50 degrees are the best. Look for willows in low bottom areas. Best is Jan-march.

I'll keep that in mind for next year. We usually eat them, or give them away, as fast as we find them. The season is now done where I hunt in southern Indiana.

How do you positively identify oyster mushrooms? Are there any poisionous lookalikes to be concerned about?
