I am a big fan of Chigoosage. I made it up a few years ago and it really took. I am doing another one for Christmas. http://www.louisianasportsman.com/lp...port&id=138666 Another good recipe is to stuff the bird with Tasso, potatoes, carrots, and celery. Put pineapple's on top and season to your liking. I know it sounds weird, but the sweetness of the pineapple works with the goose. |

I like to smoke mine on the pit. Follow this receipe and you'll swear your eating prime rib.
Brine overnight, take out and Inject with water and your favorite seasonings, put on pit with indirect heat and burn apple wood. Cook at 325 and It's done when the internal temputure hits 165 degrees. So far this year I pot roasted a spec, gumbo with a blue, but this was the family's favorite. |
