croaker
flounder (filleted)
speckled trout
white trout
catfish or channel mullet
redfish
drum

if im hungry and nothing elese to eat

sail cat

in that order

lots of people eat and like sheepshead but I find they have very little meat for the size and on top of that, the meat is often spongy textured so its on the bottom of my list as in the last thing if nothing else is there

Won't eat redfish or drum. Will eat catfish if it's thin like midendorf's (spelling) in manchac. Have loved that place since I was 7.

True, Redfish and Drum do require advanced cooking skills. However, if that's the only game in town, I don't turn my nose up to it. Many areas in South Louisiana don't offer year round Speckle Trout opportunities... and I agree, 98% of the Seafood Restaurants everywhere screw up fried catfish.

Sparhs in Des Allemands has some rocking catfish chips, wash it down with a Bloody-Mary and it's a spiritual experiance.

I'm on the same page with you on the catfish; I love those catfish chips.

Big drum and redfish are nasty but the smaller ones are great lightly breaded and pan toasted.

Most all of you have eaten black drum in restaurants under the pretense of red-snapper, and probably thought it was fantastic.

To be honest though, there aren't many that I don't like in some form or fashion. Some are better raw and some cooked - for me, its all about the sauce
