I ain't no doc. but the way I see it you can cook pork in pork fat , beef in it's fat , just about everything cooked in butter or margerine or fry in veg. oil . Long as the oil is hot it's not absorbing in the food and you put on paper to drain you really not consuming that much. Probly less than a pork chop or steak...Tried green tomato's before didn't care much . Found recipe to cut 1/4 inch slice pass in season flour pass in egg pass in panko bread crumbs . Sprinkle on lil Tony's after they fried . Them things is great and I got plenty greenies .
