Put them swimps in the fridge after you season them.
Make you a good size pot of garlic cheese grits and put them in the fridge overnight too. Take out the garlic cheese grits and make some small patties . take out the shrimp. fry the patties in butter and olive oil. Put aside and keep warm.\ Warm the shrimp and place on top the grits . Make a sauce of butter flour and cream . top with sauce and diced green onions |

slice them across the back, stick a piece of prosciutto, cream cheese and a sliver of jalapeno pepper, wrap it in bacon batter it like you would any fried shrimp and fry them puppies.

I like them the same way, except use crabmeat and japs for the filling.
