I really dont know howto cook red fish. If you want to share your recipes. What are some differnt ways to cook red fish.

I like to cook them on the half shell on the pit. I season them up them inject with creole butter cajun injector. And I smother down some onions ane bell pepper and garlic in butter on the side. Right before I pull the fish off I spread on top and sprinkle parmesan cheese on top and let it crisp up then pull it off and enjoy.

I found some good recipes on this site http://www.emerils.com/ my family really liked the red fish courtbouillon

So many people downgrade redfish. Unlike trout the smaller reds very seldom have worms. The key is to trim all the red meat off. I started using foil on the grill instead of cooking them on the skin and scales...much better taste to me. You can fry them just like trout too. Almost everytime I fry trout I mix about half redfish fillets and nobody can tell the difference. Of course they are great in a red gravy as well. Another good easy way is get a cast iron grill pan and coat the bottom with olive oil and season the fillets with your favorite cajun blend and garlic powder.

Once I learned how to blacken redfish, i keep as many as I can 16-22inch

Cube up some fillets and saute them in butter. Season to taste and add alfredo sauce. I use the stuff in a jar. Its good and fast. I like mushrooms in mine. Put that over a bed of pasta and dinner is ready. 30 minutes and plate.

Find a crab cake recipe that suits your taste and use redfish in place of the crab.

I keep it simple, charcoal grill, baste with garlic butter. About 1 minute before I take it off the pit I sprinkle Swamp Dust crawfish seasoning on it. Makes ya mouth happy.

I call it Redfish Milligan
