Default Red Beans Thursday

Who says you can only cook red beans on Mondays?
Better yet, who says you can't eat Red Beans and Rice any or every day of the week?
Actually I was supposed to cook these this past Monday but we had a Red Bean Dinner fundraiser at St. Francis Xavier and so I deferred to today to cook these four pounds I picked up last week.

So of course I forgot to put them to soak overnight but I figured four hours will do this morning.

Big cook today so I brought out the big boy!

Seasonings chopped and time to brown the sausage.

No dried bay leaves so I went to the yard and plucked some from the tree and while out there I thought I heard something in the fridge in the patio shed calling my name. Sure enough there was an ice cold Abita Golden screaming for me to open and drink it. Life is good some days! ;D ;D

Now mixing the seasonings back into the sausage.

And the red beans added! I like to mix it all together before adding the water or stock so it's right next to something tasty while it cooks. ;D

Water was added(I was out of chicken stock)and they're simmering to orgasmic Red Bean perfection! It is smelling pretty awesome in here!!!
