Dance Red snapper recipes

What ya got? I'll more than likely be grilling them on the big green egg but looking for sauces or toppings for them bad boys.

Marinate in olive garden dressing for an hour and your fav seasoning and throw it in the grill. Easy simple and very good.

On a charter next Friday, one I have tried on trout, ling and shrimp.
Batter fish / shrimp in cracker meal, then brown them in butter lightly, I use 12" sauce pan. Place fish aside covered in foil to keep cooking process going. add 1/4 stick of butter to pan, chop an onion, a couple of jalapenos, mushrooms and tomatoes. Cook vegs down till they start to dry out, sprinle two teaspoons of Kary's dry roux then add half and half, cook till thickens place fish back in sauce to re-heat. Serve over rice or pasta with a COLD beer.

It was very very good. The mrs just finished cleaning crabs so I have about 2 lb of lump for next times topping.

They're the tits. I've had mine for a year now and love that thing. High temp grill, smoker, and oven all In one.
