Default Solo trip to lake Charles

It wasn't the best day but made the most out of it! All caught on gulp under a popping cork working rocks!!

They really arent bad at all as long as you keep the smaller ones (16-20"), I've seen some recipes that used the meat to make "Crab Cakes" style patties that I've wanted to try..

Yea I really won't keep any bigger then 18" but I've fried them side by side with reds and couldn't tell the difference or pick out which was which

My wife does patties with redfish.
Off the chain.

Throw some onion, shallot, bell pepper in a skillet, cook them a little bit, throw 4 redfish fillets in there, add a little water, just enough to keep the fish from grilling. They gonna fall apart & turn themselves into crab meat, cook that up a little bit, and turn it off. Season it up, add about a half cup of mayo, an egg, and a couple cups of bread crumbs. Mix that up & put in the frig for about 30 min (or 2 beers). Make patties, pass them in fish fry & fry that. Or you can use Zataran's crab cake mix.

I use a traditional crab cake recipe. But I boil the fish in a little liquid crab boil and use that in place of crab meat. Comes out really great.
