Default Canning Fish

I had a buddy give me some cans of salmon that he caught, filleted and canned during his last trip to Alaska. It was awesome straight out of the can, and made great tuna type salad... I want to do it with reds and drum to see how it comes out.

He said they used a template for cutting the filets that ensured each roll would fit the tin cans perfectly. Once in, throw some curing salt in and seal it up then pressure cook. Now you got fish you caught that won't perish for a very long time, plus it's better than the junk in the can at wal mart.

My question are:

- Have any of you done this and can you give some pointers?

- What's the proper name for the deal they used to cut the filets, and where is the best place and deal?

- Where is the best place to order canning supplies?

- Is a pressure cooker mandatory, or are their ways around buying one and still maintaining the integrity of the finished package?

Man that sounds really awesome. I dont see how you could safely do it without using a pressure cooker.
I like the idea of it and may look into It myself.
A light smoking of the fillets prior to canning would add a great flavor.

Most walmarts I have been to have basic canning supplies. If you have Tractor Supply near you they usually have canning jars and such.

Pressure cookers are relatively cheap. They cook the hell out of some red and white beans too. Pretty much ecery department store has canning jars. They curing salt you can get from Cabelas, Bass Pro and Academy.

Be careful w/ curing salt aka sodium nitrate aka pink salt. if you use to much it can be poison. Do a bit of research on how much to use.

There is a difference between a pressure cooker and a pressure canner.
A pressure cooker is great for getting meat and such tender in a hurry.
A pressure canner will be needed to safely can food.
When we canned bacon it took 12lbs of pressure for 90 minutes.
