Default yellow rice

had this at a wedding last week. woman that made it was Brazilian. said she started making it to get her kids to eat carrots.
shave a carrot and cut shavings into little pcs.
put carrots and a small amt of oil in a pot and cook down till soft.
make rice like normal in the same pot with carrot mixture.
haven't tried it myself yet, but her's was great, course it was covered with crawfish etouffee.

I make that, put a little saffron to get that nice color and some garlic. I use chicken stock and cook it in a big skillet.

I make redrice......2 cups rice ,,, 2 cups water,,,,, 1 can tomato sauce,,,, 2 cups peel shrimp,,,,, bout a foot of smoke sausage,,,,,,salt n pepper to taste,,,,,,bring to boil ,,,, cover and put on lowest heat for 40 minutes.......fry down sausage first.....lil buttered corn on side.....don't ferget onion n bell pepper......

Hmmmm. You're making me hungry Bubba.

My cousin's wife made homemade mexican rice a while back at my house. It smashed any other one I tried anywhere.... Including Mexico. She's half Hispanic so I guess that helps.

jalapeno rice isn't too bad either, put some rice in a rice cooker, add butter chopped up jalapenos from a jar and substitute some of the jalapeno juice for your cooking water, eat it with whatever or just by itself
