Default Homemade Duck Pastrami and Foie Gras Fries

I wanted a really good sandwich so I decided to make some Duck Pastrami.
After brining for two days, adding the spice rub and a smoking session on the Bubba Keg.

Slicing

Ready for a short steaming. It was already really tender so the steaming was for warming it up before making the sandwich.

Time to eat! I had made all the condiments you see there. Mayo, Brown Mustard, Yellow Mustard(I couldn't decide which one I wanted to use)and Ketchup for the grilled fries. And the pickles too!
