X2 ... This is the way I do it .. Works great, I keep filets packed on ice for three days ... it can be a pain, but i dont waste any meat trimming

I've eaten bull reds that were bled and they weren't all that bad. No worse than a big catfish.

I do mine on the half shell with ball's sodium free seasoning. I sear flesh side down turn then brush with Budweiser BBQ sauce. Try this its quick and easy. You wont be disappointed.

I eat them too, but i can feed a small army with a some nice size reds. I save the flounder for just me and the wife!! haha
